Why do we keep our specialty beers cold? The majority of our specialty beers (especially the Belgians) are unpasteurized, unfiltered and fairly high in alcohol. We feel that warm shelf storage (especially in the summer) is not in the best interest of the beer. Quite simply, these are some of the best beers in the world and they deserve to be stored at the proper temperature.
- Some Belgian brewers believe that prolonged storage temperatures between 75-80 degrees can wake up the dormant yeast and cause an additional fermentation, which will not only produce off flavors, but will often over-carbonate the beer causing a gush upon opening, or even worse, an explosion.
- Cold storage preserves the freshness and the quality of the beer.
- Pasteurized beers can handle several months of 75 to 80 degree storage on store shelves , unpasteurized cannot.
- I believe that our collection of specialty beers, as a whole, is in optimal condition, because of our decision to store them cold.
- Our customers deserve the beer as the brewer intended.
